The more than 600-year-old Laubenhaus in the former cathedral city of Bressanone, South Tyrol, will open in August 2023 as a nine-suite hotel called fink with a Lauben restaurant featuring "monastery cuisine" and a small spa. The inn, which has been family-run for more than 125 years, was renovated and redesigned by hosts Petra Hinteregger Fink and Florian Fink in recent months under the direction of ASAGGIO Architects from Bressanone. The clear and puristic furnishings of the nine suites, the restaurant and the spa emphasize the monastic atmosphere. Florian Fink's special kitchen concept is based on centuries-old knowledge of herbs, vegetables from religious brothers and sisters, which flows into his dishes. fink's holistic sustainability concept has received the most important certification program for sustainable travel and tourism called Earth Check.
